Quick Dijon Vinaigrette with Leftover Mustard

You don’t want to waste leftover mustard?  How about a quick Dijon vinaigrette in less than 5 minutes to make great use of it?  It’s no secret that Maille mustard is one of Art of the Home favorite mustard.

French Dijon vinaigretteDid you know you can use that pretty jar to make a quick vinaigrette too?  There is always leftover mustard in those jars so instead of scraping the side (you can never waste a good mustard!), we use the leftover mustard and quickly prepare a Dijon vinaigrette for a side of green salad, a meal starter (carottes râpées), or a quick composed salad.

Art of the Home Tip for a Quick Dijon Vinaigrette

When you have the equivalent of about 2 tsp of mustard left in your jar, here is how you can make your quick Dijon vinaigrette in just a few minutes:

  1. Add 2 Tbsp of vinegar or the juice of 1/2 a lemon inside the mustard jar.  Add salt and pepper to taste and mix with a teaspoon scraping the side and bottom of the jar.
  2. Pour in 1 Tbsp of olive oil.  Close the lid tight and shake vigourously for about 5 seconds (on top of your kitchen sink just in case!).
  3. Open and add 5 more Tbsp of olive oil and shake again.  You can also add minced shallots or a good pinch of your favorite spice, and voilà, your vinaigrette is ready!
