There is always leftover mustard in those jars so instead of scraping the side (you can never waste a good mustard!), we use the leftover mustard and quickly prepare a Dijon vinaigrette for a side of green salad, a meal starter (carottes râpées), or a quick composed salad.

Art of the Home Tip for a Quick Dijon Vinaigrette
When you have the equivalent of about 2 tsp of mustard left in your jar, here is how you can make your quick Dijon vinaigrette in just a few minutes:
- Add 2 Tbsp of vinegar or the juice of 1/2 a lemon inside the mustard jar. Add salt and pepper to taste and mix with a teaspoon scraping the side and bottom of the jar.
- Pour in 1 Tbsp of olive oil. Close the lid tight and shake vigourously for about 5 seconds (on top of your kitchen sink just in case!).
- Open and add 5 more Tbsp of olive oil and shake again. You can also add minced shallots or a good pinch of your favorite spice, and voilà, your vinaigrette is ready!
