How about some light waffles or fluffy pancakes to say bonjour (good morning) to your loved ones?  It is a great way to start any weekend morning in a good spirit (dans la bonne humeur) but it is especially a treat on holidays where we have more time typically.  And you can make the batter and the pancakes or waffles ahead you know.  So you get to enjoy your family and they get to enjoy your company as well!  Now depending on your batter recipe or mix, pancakes and waffles can get heavy and harder to digest so we always adjust our recipe with the tip below – that’s what we do for crêpes and it works for pancakes as well (which are basically thick crepes in a way).   Taking this extra step results in pancakes that are tender and fluffy and waffles that are as light as waffles can be – your family will be asking for more!

  1. You start like you would make crêpes.  First the dry ingredient of your batter inside your mixing bowl (flour, sugar, baking powder, or pancake/waffle mix).  Note: if making homemade pancake or waffles, make sure you sift the flour.).  Make a well in the middle and mix in your eggs one at a time.  Slowly add in the other liquid ingredients (milk, buttermilk, melted butter or whatever your recipe calls for).  If time allows, it is a good idea to let your batter rest in the fridge a little bit – you can even prepare it the night before.
  2. So here is the tip — add “un verre d’eau” (a glass of water – that’s based on old French measuring instructions) which is about 1/2 cup of water to your batter right before you are ready to start your pancakes or waffles.  You can also add beer instead, either one works wonders and makes a much lighter batter for delicious pancakes that will be easier to digest also.  And voilà — wishing you a lovely breakfast!

    An old family secret to fluffy pancakes is to add a scant 1/4 teaspoon white vinegar to the batter just before you cook the pancakes. Mix it quickly then spoon out as usual. The vinegar will react with the baking soda in the batter and give a boost to the formation of air bubbles in it.
