To make sure each madeleine comes out of the oven with a beautiful hump (une belle bosse), simply:
- Let the madeleine dough rest for 30 minutes to 1 hour in the fridge. The difference in temperature between the fridge and the oven helps in forming a more pronounced hump than if if you skip the resting time — but if you don’t
- Proceed with filling your madeleine pan, making sure you put the dough back in the fridge between each batch.
